(COLORADO SPRINGS) — Food trucks from around the Pikes Peak region descended on downtown Colorado Springs on Sunday, June 1 to prove they could put together the best grub in southern Colorado.
Out of the many food choices, it can be hard to go wrong with cheesesteaks. Matt Spain, the owner of Mateo’s Catering and Personal Chef, has been working on perfecting his own cheesesteaks for the last 15 years and shared his green chili cheesesteak with people downtown on Sunday.
He’s been at the last two Battle of the Food Trucks and enjoys seeing all the local food trucks come together.
