A Colorado Springs chef highlights toxic kitchen culture in the wake of revelations about Noma. Plus, familiar Cajun and Creole food near Memorial Park

If you were a fan of Springs Orleans at the Mining Exchange in downtown Colorado Springs, you’ll be happy to know that a similar concept is returning to the area. On the corner of Union Boulevard and Prospect Lake Drive, just southeast of Memorial Park, sits a once vacant Greek restaurant.

Known industry investor Perry Sanders is “putting the band back together” and plans to offer a variety of Cajun and Creole staples like po’boys, red beans and rice, and boils.
