Japanese noodles have become very popular in the United States. The larger UDON noodles have been on menus at Japanese restaurants for many years. More recently, many RAMEN noodle restaurants have opened up.
Chef Naoto Niiyama opened Menya Hanabi in Nagoya, Japan, in 2008. It started as a local ramen shop which gained national recognition. He began experimenting with new types of ramen. He developed the Original Nagoya Mazesoba, a brothless ramen dish.
Chef Niiyama created the Mazemen or Mazesoba dish which includes noodles, a special sauce base, spicy minced port, green onion, chives, garlic, and fish powder. The bowl of ramen is topped off with a poached egg.
There is a Menya Hanabi located in Irvine, California, at 5408 Walnut Avenue. Another location is in Arcadia, California, at 733 West Naomi Avenue.
