When Jonathan took over the restaurant in 2019, just before the pandemic, he was stepping into a dream shaped by years in restaurant management. The timing was tough. COVID-19 forced him and his team to pivot quickly, shifting to takeout and adapting to closures while holding onto their commitment to freshness and service. But in weathering those challenges, Ichiban emerged stronger. “Overcoming challenges like COVID taught me resilience,” Jonathan reflects, “and every day, I’m driven to uphold our reputation for quality food and top-notch service while fostering a team that feels like family.”
