Elements of fantasy are hidden in plain sight everywhere for those who look closely, from inscriptions like “Here lie dragons,” to individually chosen renditions of the beast pinned on the chest of every server. Behind closed kitchen doors, executive chef Matt Marcus is working his “witchcraft,” as he calls it … or at least some mad science as he explores where modern machines, unique meats, and twee plantlings grown in the dark take him.

He’s egged on by owner Jonathan Yu—the outward opposite to the roguish tattooed chef and the game-for-anything, sly devil on his shoulder who hides a mischievous heart behind elegant suits. He’s responsible for surprises like elixirs tucked into hollowed books and designing a dreamscape in what looks from the street to be a quaint farmhouse…
