DENVER (KDVR) — The group behind Blue Island Oyster Bar and Oliver’s Italian is set to open its newest restaurant in the shuttered California Pizza Kitchen at the Cherry Creek Shopping Center.
Shucking Good Hospitality opened the popular Blue Island Oyster Bar in Denver and Lone Tree, as well as Oliver’s Italian in Greenwood Village, and now, they’re slated to open Ash and Agave in early April at the California Pizza Kitchen that closed over the summer.

Ash and Agave is a Mexican restaurant inspired by the Mexican Riviera. Think coastal, resort-style atmosphere with greenery, lounge seating and wood-fired meats and fresh seafood from the group’s Blue Island Oyster Farm.
“Ash and Agave was designed to give a feeling from the moment guests walk through the door. We wanted a space where the lighting, music, cocktails, and food all work together to create something transportive,” said Founder and President Sean Huggard. “It is lively, warm, and built for connection, whether guests are joining us for dinner, drinks, or a long evening with friends. We are thrilled to bring this incredible concept to Cherry Creek.”
The restaurant said it will have a “Carne Locker” with premium cuts prepared over a 900-degree fire, as well as shareable plates like wood-grilled oysters and mix-and-match tacos. It will also have a spirited beverage program, which includes agave-forward cocktails and agave flights.
