Wilmington-based restaurant, K38 Baja Grill, is opening a Cary location at 147 East Chatham St. on Saturday, Aug. 29. The Mexican-inspired eatery opened in Raleigh at Seaboard Station in December 2025.
This opening is the brand’s seventh location, with many based in the coastal towns of Wilmington and Carolina Beach. The business, founded in 1993 by Josh Vach, gets its name and coastal vibe from founder’s favorite renowned surf break in Baja, California, according to a press release.
“As soon as we opened in Raleigh, we knew we wanted to continue growing in the Triangle,” Brian Brennen, CEO of Live. Eat. Surf., K38’s parent company, said in a press release. “Cary stood out because of its family-oriented feel and welcoming community, which aligns so naturally with who we are. As we expand inland, we always want to stay true to our roots while bringing a little bit of the beach to every new community we join.”

Cary and Raleigh’s menus feature tacos, enchiladas, quesadillas, salads, wraps, sides and rolls, described as “a tightly rolled burrito cut into bite size pieces.” Prominent flavors on the menu are fajita, defined as citrus & soy and sweet & savory; Santa Fe portrayed as traditional cilantro & garlic flavor; and achiote, characterized as bold, smoky and citrus.
