Franchisee Yash Patel is at the helm of the Durham outpost, according to The News & Observer. The paper reports the restaurant is set in the Renaissance Village center near Target and notes company chatter about a soft opening ahead of a full public debut. Locals can expect to see construction wrapup and hiring ramp up before doors officially open.
Bubbakoo’s menu leans hard into Mexican-fusion comfort food, with signature mashups like the Papi Hibachi, featuring steak and shrimp with cilantro-lime rice and pico, and a Nashville hot chicken burrito that reads like a spicy love letter to Southern heat. Standard favorites such as quesadillas, tacos and nachos share space with the chain’s “Chiwawas,” panko-crusted rice and cheese bites, plus sides including curly fries and tater tots.
