Each month, Chautauqua County has health code inspectors who visit restaurants and other spots with food preparation. The inspectors are tasked with trying to keep us safe. They thoroughly review each restaurant’s operations and location to make sure the restaurants are not violating any health codes. Health code inspectors report on non-critical violations such as “Food not protected during storage, preparation, display, transportation and service, from potential sources of contamination (e.g., food uncovered, mislabeled, stored on floor, missing or inadequate sneeze guards, food containers double stacked)” and “Wiping cloths dirty, not stored properly in sanitizing solutions.”
Some restaurants get flagged for critical violations, such as “Potentially hazardous foods are not cooled by an approved method where the food temperature can be reduced from 120°F to 70°F or less within two hours and 70°F to 45°F within four hours,” or “Cooked or prepared foods are subject to cross-contamination from raw foods.”
