Humans of Lane County: Finn Mifsud crafts gluten-free goodies at Fig & Bean in Eugene

Morning light streams through the windows of Fig & Bean as the smell of fresh bread wafts out onto Oak St. Business people look longingly through the bakery windows on their way to work. It’s 7:30 a.m., and Finn Mifsud has been working for 2.5 hours. She started her day with bigger bread projects like the artisan boule and sandwich loaves. Later, she’ll move on to bread rolls and ciabatta buns, filling her wholesale orders for the week.

Mifsud, 23, is the sole owner and operator of Fig & Bean, a gluten-free bakery in Eugene. She launched the business with money from the Oregon Innovation Challenge, or OIC, after graduating from the University of Oregon in 2023.
