Try Filipino cuisine at this new Eugene food truck

Tucked away on River Road, a new, bright red food truck is serving fresh, hot Filipino cuisine to the people of Eugene. Jing-Jing’s Filipino Cuisine, a food truck that recently opened in Eugene, is owned by Rosamoon Advincula and her husband, Paulo. The truck is the result of Rosamoon’s lifelong dream to own her own restaurant.

“Having a restaurant has been my dream since I was a young girl, but now the turnover is so high, so we decided to start small,” she said. “Everything in the food truck is going well right now, so we’re happy.”

Rosamoon and her husband were born in the Philippines and came to the United States in 2001. Their culture is reflected in the delightful dishes on their menu that remind them of home, including rice-based dishes like sisig, meaty dishes like binagoongan, and noodle dishes like pansit chow mein…
