A new bistro opens near the University of Oregon, plus two foodie events in Eugene

Looking for a cozy bistro to spend the morning reading in? Or the late-night coffee and cocktail spot that you’ve been dreaming of holing up in with your laptop? Sara Willis is bringing that vibe to the University district with Siesta Seven, a new spot serving breakfast all day, as well as lunch and dinner dishes near campus. The restaurant opened in December with limited hours, and is officially opening for dinner service on Jan. 30.

Also, two new foodie events are coming to Eugene and February, and this article has the inside scoop on both of them. The Vegan Chef Challenge, where local businesses prepare plant-based dishes for diners to vote on, is kicking off Feb. 1. The Grilled Cheese Experience is returning to Eugene for the 12th year, raising money for Food for Lane County and the spirits of diners across town with delightful sandwiches.

Siesta Seven opens near UO campus

On a cold January morning, Siesta Seven, a new bistro near UO campus, is a cozy haven. Bossanova lilts over the speakers, and a tantalizing aroma of bacon and espresso hangs in the air as a few early morning customers page through the newspaper or check emails before class. Owner Sara Willis ensures the restaurant will continue to provide good vibes all day, with a lunch and dinner menu available as the morning moves into the afternoon.

“We’re a very casual spot where people can come in and have a coffee or a snack, which I think adds something new to this area,” Willis said. “You can come and get your laptop out or have a glass of wine with friends, that kind of vibe.”…
