Tacoma Restaurant Launches New Commissary Kitchen to Help Mitigate Food Insecurity

Tacoma-based restaurant Manuscript recently announced the launch of a new commissary kitchen venture, the Epilogue Kitchen Collective, that also will serve as a community meal-distribution service.

The commissary kitchen is designed to serve as a culinary space during Manuscript’s off hours, where mobile food vendors, pop-up chefs, and small culinary businesses can use the space as an affordable, community-oriented kitchen. Epilogue is additionally hoping businesses that use the space will work with its partner, The Footnote Collective, to prepare and distribute additional meals for free to underserved and food-insecure community members, according to a press release.

There will be partnerships with shelters, parks, community centers, and others that will help distribute the food. Those who participate in the program will receive discounted access to the commissary space…
