San Antonio’s top chicken-fried steak takes a break

San Antonio’s comfort-food fans let out a collective gasp when one of the city’s top chefs recently announced plans to 86 his most popular dish.

Andrew Weissman posted a brief video to the social media pages for his restaurant Max’s Sister that showed a sweeping pan across an assembly of employees with the hashtag #nomorechickenfriedsteak and the comment, “We are going to bring something different to San Antonio. See you soon.”

It’s that chicken-fried bit that caused the most sizzle. Weissman has unceremoniously yanked his CFS — recently named the best in the city by Express-News restaurant critic Mike Sutter — from the current menu at Max’s Sister. While Weissman acknowledges the dish is a big money maker, he’s not afraid to put a foot down and decide what the rules are in his own house.

“There have been some people who really took it personally when I took it off the menu,” Weissman said. “I’m so filled with gratitude for the folks who love it, but I think I’ve earned the right at some point to dictate what goes on my menu. We have changed this menu at least 10 to 12 times since we opened. Just because I took it off now doesn’t mean I don’t reserve the right to bring it back.”…
