Rhode Island nationally recognized as birthplace of chicken salad

SOUTH KINGSTOWN, R.I. (WPRI) — Did you know chicken salad was invented in Rhode Island more than a century ago?

Stop & Shop revealed Wednesday that the deli favorite, which dates back to 1863, originated in South Kingstown, specifically in Wakefield.

The story goes that Town Meats owner Liam Gray combined leftover chicken with mayonnaise, tarragon and grapes to create the now-classic dish.
