Much like the expression “boom goes the dynamite,” when it comes to favorite restaurants in Colorado – especially in Fort Collins – “gone goes another one.”
This time Inca Mexican Restaurant, which has been open in midtown Fort Collins the last 24 years has closed their doors for good, as of a few days ago. The building they’ve occupied since 2002 has been given to another tenant, who plans to redevelop the property.

Inca’s owner says he was offered another building nearby but ultimately chose not to move, and to close the restaurant instead.
Initially they had until the end of this month to wrap things up before making away for a new bank development, but opted to go ahead and close their doors on May 31, leaving many of their longtime customers sad about the outcome…
