Tony Caballero has been with the Walk-On’s Sports Bistreaux brand since 2008. He opened the Lafayette location in 2011 as general manager as a proving ground for expanding beyond Baton Rouge.
Now as a franchisee and owner of the Lafayette location, he says the Carencro location that will open this summer along Interstate 49 is the next step. The market data – Carencro’s population has grown over 40% since 2020 – was a key factor.
“Carencro was already in our sights as early as 2012,” Caballero said. “When we were able to reacquire Lafayette, we knew right away that this amazing city just north of us was a natural fit. You want to get in early and grow with the town rather than showing up after it has already taken off.”…
