Chester County’s Sourdough Movement Is Rising Fast, One Loaf at a Time

What began as a pandemic-era hobby for many people has evolved into a local movement, driven by a hunger for simple ingredients, traditional food preparation, and a slower pace of life, writes Caroline O’Halloran for SAVVY Main Line.

At the center of that movement is Wild Yeast Bakehouse, the sourdough microbakery founded by Rosemont resident John Goncher that is preparing to open a new location in Wayne’s Eagle Village Shops this summer.

The new space will be roughly ten times the size of its original operation. A former corporate finance executive, Goncher traded spreadsheets for starters and began working the business out of his home kitchen five years ago. The expansion will allow Wild Yeast to scale its bread share program, deepen its wholesale partnerships, and grow its farmers market presence…
