Emeril Lagasse’s ‘Magical’ Summer Dinner Is Surprisingly Simple—and Incredibly Delicious

Chef Emeril Lagasse is no stranger to the flavors of Louisiana. The iconic chef opened his first restaurant, Emeril’s Restaurant, in 1990 in New Orleans, and has been incorporating the flavors of his hometown into his culinary endeavors ever since.

In fact, there’s a dish that appeared on the menu when Emeril’s Restaurant first opened that the chef still draws inspiration from today, and it’s got all the makings of a perfect, easy summer dinner.

At an event showcasing Lagasse’s work as Carnival Cruise Line’s Chief Culinary Officer, I attended a Q&A with the chef, where he demonstrated how to cook his signature shrimp recipe. Lagasse’s work with Carnival includes planing menus and concepts for the four new restaurants coming to select ships in the fleet. This tasty barbecue shrimp recipe will even appear on the menu at Emeril’s Coastal Seafood restaurant, which will be aboard two upcoming ships: Carnival Festivale and Carnival Tropicale.

“To highlight a signature dish that I created 37 years ago when I was working on opening Emeril’s—there were signature dishes that I wanted to do and this was one of them,” said Lagasse of the classic shrimp dish. “This is not an original dish of mine or an original dish of New Orleans because everybody has a different version of it…so this is the dish that I created. This is my version of barbecue shrimp.”…
