The Madison County Health Department inspected the following establishments June 22 – 26.

  • 10 (Pf) Hand washing shall be provided with paper towels, continuous towel system supplying user with clean towel, heated-air hand drying device or air-knife system Reference 6-301.12. PAPER TOWELS MADE AVAILABLE. CORRECTED.
  • 23 (Pf) Food prepared and held in a food establishment for more than 24 hours must be clearly marked to indicate the date or day by which the food must be consumed on the premises, sold, or discarded when held at a temperature of 41F or less for a maximum of 7 days.Reference 3-501.17. MASHED POTATOES AND PASTA IN WALK-IN COOLER NOT DATED. MASHED POTATOES DISCARDED, PASTA DATED DURING INSPECTION. CORRECTED.
  • 5 (Pf) Time and temperature control for safety (TCS) food must be thawed: (A) Under refrigeration that maintains the food temperature at 41F or less; or (B) Completely submerged under running water at a water temperature of 70F or below, with sufficient water velocity to agitate and float off loose particles in an overflow, and for a period of time that does not allow thawed portions of ready-to-eat food to rise above 41F; or (C) As part of a cooking process; or (D) Using any procedure if a portion of frozen ready-to-eat food is thawed and prepared for immediate service in response to an individual consumer’s order. Reference 3-501.13. FISH UNDER STANDING COLD WATER. FAUCET TURNED ON. CORRECTED. 35 (Pf) Frozen fish is thawing while still wrapped in reduced oxygen packaging (ROP). Packaging must be removed from fish in ROP prior to thawing under refrigeration or running water. Reference 3-501.13. FISH THAWING STILL WRAPPED UP. PACKAGE REMOVED. CORRECTED.
  • 39 (C) Food shall be protected by contamination by storing it: 1) in a clean, dry location; 2) where it is not exposed to splash, dust or other contamination; 3) at least 6 inches above the floor. Reference 3-305.11. BOXES OF MEAT STORED ON THE GROUND IN WALK-IN FREEZER. PIC PICKED THEM UP DURING INSPECTION. CORRECTED.
  • 44 (C) Clean Equipment/Utensils/Linens/Single-Use Articles stored incorrectly. Equipment, Utensils, Linens and Single-Use Articles shall be stored: 1) in a clean and dry location; 2) away or protected from contamination; 3) at least six inches above the floor; 4) covered or inverted. Reference 4-903.11(A), (B) and (D). UTENSILS NOT COVERED OR INVERTED. PIC INVERTED THEM DURING INSPECTION. CORRECTED.
  • 45 (C) Single-Use Articles are stored incorrectly. Single-Use Articles shall be stored: 1) in a clean and dry location; 2) away or protected from contamination; 3) at least six inches above the floor; 4) covered or inverted. Reference 4-903.11(A) and (C). BOXES OF PLATES STORED ON THE GROUND IN STORAGE AREA. EMPLOYEE PICKED THEM UP. CORRECTED.

  • 53 (C) Restroom does not have a tight-fitting and self-closing door. All toilet rooms located within a food establishment must be enclosed with a tight-fitting and self-closing door. Reference 6-202.14. **. PROVIDE SELF-CLOSURE FOR WOMEN’S RESTROOM DOORS.
