Shake Shack will likely join Eden Prairie’s lineup of restaurants after the City Council gave initial approval July 14 to plans for the restaurant and a Valvoline Instant Oil Change location.
Planned for 11609 Leona Road, the proposed businesses are part of the second phase of a project that included demolishing the former Office Depot and building a Planet Fitness. A Starbucks was initially approved for the site, but that project did not move forward.
Final approval will be considered at a future council meeting.
Both businesses would be located in the Planet Fitness parking lot, with the Shake Shack restaurant in the northwest corner of the site and the Valvoline location on the east side of the parcel…
