New brunch restaurant Early Bird will open next week in Sioux Falls.
The Nebraska-based restaurant will open Aug. 10 at 3101 W. 41st St., which most recently was a location for Jacky’s Burrito Express and before that was Fuddruckers.
Customers won’t recognize the place, predicts Fred Preator, the franchisee for the restaurant with his wife, Amy.
“I think it’s fantastic,” he said. “It’s one of the newest, coolest Early Birds around.”
The Preators discovered the restaurant concept in Omaha. The Sioux Falls location will be the 10th. The corporate team is in Sioux Falls helping train staff — following a strong response to hiring.
“It was phenomenal,” Preator said. “I think we had close to 300 applicants for 40 positions. We have a great staff coming on, and we’re pretty excited about it.”
