A breakfast concept is expanding south sometime this year.
The owners of Good Truckin’ Diner in Lansing are getting ready to debut a new spot in the REO Town district this year. This is to be a change of concept, being a counter-service restaurant rather than a diner. Owner Nick Sinicropi said there is not yet an opening date as he still has to go through health department inspections.
While no menu has been released, Sinicropi said the concept will be “completely different.” From their Facebook page, quick bites like tacos, sandwiches and hot dogs are going to be served. Ice cream will also be scooped up for customers…
