Amarillo is growing, and new businesses are moving in all the time. It seems that a new business has kind of snuck in under the radar, but if you love pies, sandwiches, and a salad bar, you are going to love this new place that has moved into Town Square Village.
From Shelby’s Diner to Town Square Village
The owners of this new restaurant are not new to the restaurant business; they have been serving the residents of Amarillo for years. Shelby’s Diner first opened in Amarillo in 2022 at Tradewinds Airport. Then, in 2025, the owners of Shelby’s Diner opened a second location called Town Square Diner in Town Square Village.
What Happened to the Old PJs Coffee Spot?
Then, in December 2025, PJs Coffee closed its location in Town Square Village after less than a year. We started noticing things happening in the empty building at 9180 Town Square Blvd. Suite 1310, but at the time we could not get an answer to our messages about what was moving in.
But now we know.
