Paloma Atkins loves baking. She’d bake cinnamon rolls with her grandma, and Sundays were for making pizza. She also loved to bake cookies.
In 2021, Paloma’s parents, Dave Atkins and Debbie Wutke, noticed their 11-year-old daughter was losing weight. Testing showed she had elevated levels that indicated Paloma had celiac disease, an immune disorder in which gluten damages the small intestine. An estimated roughly 1% of the U.S. population has celiac disease, though that number may be higher, according to BeyondCeliac.org.
