We spoke with the team at Jax Fish House & Oyster Bar to learn more about this restaurant staple in Fort Collins.

What do you love about Fort Collins?

The sense of community here is something special. Fort Collins has this rare quality that makes it feel intimate and neighborly, but with the energy and amenities of a much larger city. And then there’s the landscape. Open spaces weave right through the fabric of daily life here, and the mountains are practically at your doorstep. It never gets old.

What are your top 3 favorite activities to do in Fort Collins?

  1. Get up the canyon! Any canyon, any way you can. Hike, fish, camp, kayak, raft, tube. The access to that kind of wilderness, that close, is something people who grow up here take for granted and visitors can’t believe.
  2. Find a sunny patio at one of our world-class breweries. Fort Collins has a brewing culture that’s genuinely earned its reputation, and there’s no better way to settle into this city than with a local pint in the afternoon sun.
  3. Spend a day at Horsetooth Reservoir. Bike the trails, paddleboard the water, hike the Ridgeline. It’s the kind of place that reminds you why people chose to put down roots here.

What “can’t miss” activity/restaurant/place would you tell a first-time visitor to go?

Well you must always pay a visit to Jax Fish House & Oyster Bar of course! Once that is checked off, borrow a bike or rent one if you have to. The best way to experience Fort Collins is on two wheels. Go through Old Town, tour a few local breweries and follow the trails that wind through the city. I’ve lived here fifteen years, and it’s still my favorite thing to do on a summer afternoon. The city reveals itself differently when you slow down and move through it that way.

What makes Jax Fish House & Oyster Bar unique?

Jax Fish House & Oyster Bar has always been about bringing the coast inland. Since 1994, we’ve built our reputation on serving the freshest, most responsibly sourced seafood we can get our hands on. We believe that serving great seafood carries a responsibility to ensure that our oceans and waterways are thriving for years to come. Jax was proud to become the first sustainable seafood restaurant in the state of Colorado, a milestone that reflects decades of thoughtful sourcing and long-term partnerships with fishermen, oyster farms, and purveyors who share our commitment to doing things the right way…
