The Wichita-area’s third of four promised locations of The Big Biscuit breakfast chain has just opened.
The Derby location of The Big Biscuit, which has taken over the former IHOP building at 1906 N. Rock Road, is open now but will celebrate its grand opening on Wednesday, when the first 50 customers through the doors starting at 6:30 a.m. will get Big Biscuit merchandise and a $15 gift card. A ribbon cutting will happen at 11:45 a.m.
The Big Biscuit chain, which is based in Kansas City, announced its plans for Derby a year ago. There are already two big biscuits operating in Wichita: The first one opened in December at 2330 N. Maize Road, and the second opened in the former Jimmy’s Egg at Douglas and Hydraulic in June.
One more Big Biscuit is planned for Wichita. It is taking over the former Jimmy’s Egg spot at 7777 E. 21st St. and is supposed to open by year’s end.
The Big Biscuit serves a big menu of breakfast dishes including biscuits and gravy, omelets, pancakes, Benedicts, waffles, french toast and breakfast sandwiches. It also serves lunch items like salads, burgers, sandwiches and fried chicken strips…
