A former Top Chef contestant is betting that Philadelphians will eat their way through an ecological crisis. Rumblefish, a new fast-casual Trinidadian restaurant from chef Chaz Brown, plans to open at 1700 N. 3rd St. in Olde Kensington this November, serving fried fish built around invasive species like Chesapeake Bay blue catfish, lionfish, and northern snakehead.
According to WhatNow, Rumblefish will operate primarily as a takeout spot, with the restaurant debuting alongside Clifford Brown and John Skeele. Chef Brown built his resume at some of the city’s most demanding kitchens, working as chef de cuisine at the former Union Trust Steakhouse in Philadelphia and at Fatty Crab in New York, credentials that go back further still: The Philadelphia Inquirer reports he also cooked at Le Bec-Fin, Tinto, and Nobu before his 2011 turn on Bravo’s Top Chef…
