Tulane alumnus serves Japanese-style sandwiches at new Bywater restaurant

Tulane University alumnus Zac Hill is fusing Southern flavors with Japanese-style sandwiches at his new brick-and-mortar restaurant in the Bywater. Hill, who graduated with a degree in economics and management in 2019, opened the restaurant in May.

Shokupan, a soft, fluffy Japanese milk bread, is at the base of many of the restaurant’s sandwich offerings. Southern flavors such as Chantilly cream, muscadines and Bama-style barbeque sauce showcase Hill’s Alabama upbringing.
