Glass Box, a San Diego-based Asian coastal-inspired restaurant and sushi bar, has opened its first expansion location in Las Vegas. Located at The Bend in southwest Las Vegas, Glass Box Las Vegas brings the restaurant’s sushi, omakase, and Asian-inspired dishes to Nevada while introducing an all-you-can-eat dining option alongside its à la carte menu.
Chef Ethan Yang Leads the Expansion
The Las Vegas restaurant is led by Glass Box owner and executive chef Ethan Yang, a third-generation San Diego chef who founded the original location in 2021. The expansion follows five years of operations in Southern California and marks the restaurant’s first location outside San Diego.
Yang was named Chef of the Year by the California Restaurant Association at the 2026 Gold Medallion Awards. Since opening in 2021, the San Diego restaurant has also received “Best Restaurant” and “Best Sushi” honors from San Diego Magazine, Ranch & Coast Magazine, and the Del Mar Food + Wine Festival.
A Menu Inspired by Several Asian Cuisines
Glass Box draws inspiration from Japanese, Chinese, Korean, and Taiwanese cuisines, incorporating ingredients, cooking styles, and techniques associated with each.
Japanese influences are most prominent throughout the restaurant’s sushi and sashimi selections. Chinese-inspired offerings incorporate wok cooking and other preparations, while Korean influences include marinades, fermented ingredients, and spices.
