The American bistro from chef-owner Peja Krstic is locked out by its landlord with an unpaid balance of $26,415.38. After opening in December 2024, Pillar won praise from diners and a place on our 50 Best Restaurants list for its inventive cooking, including a brisket-stuffed chile relleno with peach salsa and a family style fried chicken platter with cornbread brioche rolls.
But Pillar couldn’t match the longevity of its predecessor in the space, Boulevardier, a Bishop institution for more than a decade. At Pillar, I noticed staff turnover was especially acute, with a different crew of employees working every time I visited. It’s a shame. I’ll miss those leeks and rolls.
