Miguel Roman and his wife, Epifania, started off their culinary careers in Wichita in 2021 with a food truck called Tacos Uruapan, which they still operate in front of Star Lumber on West Street.
Then last summer, they expanded, opening a stand-alone Tacos Uruapan restaurant in a new building they had put up at 819 S. Broadway.
Now, they’re about to expand again. They were the winners of the recent auction of the 1,731-square-foot building at 503 N. West St. where El Ricardo’s Mexican Food operated for 10 years before closing during the summer. Roman said that, in about a month, he’ll open a second Tacos Uruapan restaurant in the space.
“I think it’s worth it,” Roman said. “It’s on West Street. I might as well give it a try.”…
