Something’s Brewing in Ashland

Fans of unique craft beer and Mexican cuisine, rejoice. Center of the Universe Brewing Company (COTU) and Casa Herradura have officially joined forces in Ashland.

Chris Ray, COTU’s owner, says he’s been a big fan of Casa Herradura since the restaurant opened in 2021. The brewery has hosted dozens of food trucks over its 14-year history, including a few that were full-time. However, Ray was looking for something more consistent. When Casa Herradura owner José Batista pitched the idea of joining forces, Ray—a regular patron—thought the timing was ideal.

Casa Herradura just finished outfitting a new 28-foot foot trailer, complete with an automated fresh tortilla maker, a rotisserie and fryers. The trailer, which is planned to be onsite from Thursday to Sunday year round, will be parked in the beer garden area during warmer weather, and in front of the building during the winter. The partnership has potential to grow outside the four-day span, including lunch to-go.

“Ashland is home to Casa Herradura, and being able to continue growing within the community that has supported us means a lot to us,” Batista says. “We believe great food brings people together, and great food goes even better with a great beer.”

Each of the four days Casa Herradura is onsite will have a special themed day. Thursdays, Casa Herradura will be running taco specials during trivia night, and Friday afternoons will feature live music. At the Sunday event, “Bingo, Brunch, and Mimosas,” Casa Herradura will offer traditional Mexican brunch items during bingo games, and COTU will offer specials on both glasses and pitchers of mimosas…
