Gig Harbor Meat Co., a new butcher shop from a co-owner of the locally adored Blue Max Meats in Puyallup and Buckley, plans to open in the former paint shop off Kimball and Wollochet Drive, hopefully by early next year.
Tommy and Lisa Marshall confirmed this week that the building at 6876 Kimball Dr. has been painted a slate-gray, and a new golden-lettered sign teases the incoming meat haven. Rodda Paint, which acquired fellow Portland-based company Miller Paint in 2024, last occupied the space until relocating to Harbor Plaza behind Metropolitan Market.
The Marshalls applied for a business license in late May, while contractors submitted initial building and plumbing permits in July, according to city records. The initial planning and engineering applications were approved, but they await the final green-light for building and fire safety, as well as wastewater. Once those T’s are crossed, Tommy Marshall told The News Tribune in a message, they anticipate the upgrades will take a couple of months.
When it opens, Gig Harbor Meat Co. will offer a wide array of most proteins, from chicken and pork to beef and lamb, plus harder-to-find cuts of some game animals and other goods, as Gig Harbor Now reported this summer. The shop might also feature a contemporary beef aging room…
