LANSING, Mich. (WLNS) — Tammy’s Bakery & Cafe has been in service for seventeen years. Once split between two locations in Perry and Laingsburg, Tammy Hart made Laingsburg her cafe’s permanent home shortly after it opened.
Even though it’s nearing twenty years since opening the business, this is Tammy’s third year making pączki. “They have gone out of this world,” Hart told 6 News. “Everyone’s just raving about them, and they’re all strictly homemade.”
According to Hart, more than 100 special orders have been placed for this season. This means the team at Tammy’s created more than 3,000 individual pączek.
The bakery began preparations one week before Fat Tuesday to have adequate time to fill their cases.
Hart appreciates the process of adding local eggs, flour, and sugar to create a dough shaped by her hands. She then stuffs the pączki with one of many possible fillings.
