Gregg Avila is not a professional cook. But, like so many who love the outdoors in Louisiana, he could easily be mistaken for one. He’s cooked up rattlesnake – one he shot himself after almost being bit. He’s boiled crawfish and fried turkeys for first responders. He throws together dishes with shrimp, soft-shell crab, alligator or duck, sometimes with his own movable cooking rig.
