Every summer I like to fix several different marinades so that I am not fixing the same recipe over and over. This is an easy marinade to prepare and a welcome change from the standard bbq chicken recipes. You will need the following ingredients:
Recipe:
2 boneless chicken breast
1 teaspoon of dijon mustard
1 teaspoon of salt and pepper
3 garlic cloves, minced finely
pinch of cayenne pepper
1 lemon
1/2 cup of oil, I use avocado oil
Trim and cut the chicken breast into cutlets by cutting them in half long ways. This insures that the chicken does not dry out while the chicken is cooking through to an internal temperature of 165 degrees.
Add the dijon mustard, garlic, salt, pepper, oil, cayenne pepper, lemon zest and lemon juice to a gallon bag and mix the marinade well by shaking the bag several times and squeezing it with your hands.
Add the chicken and marinade for at least 30 minutes or up to 12 hours.
