Ingredients:

  • 3-pound pork shoulder (or pork butt)

  • 1/4 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for gravy)

Instructions:

  1. Prepare the Pork:
    • Season the pork shoulder generously with salt and pepper on all sides.
  2. Sear the Pork:
    • Set the Instant Pot to sauté mode and add the olive oil. Once hot, add the pork shoulder and sear on all sides until browned, about 3-4 minutes per side. Remove the pork and set aside.
  3. Sauté the Aromatics:
    • Add the chopped onion to the Instant Pot and sauté until softened, about 3 minutes. Add the minced garlic and cook for another minute.
  4. Deglaze the Pot:
    • Pour in the chicken broth, apple cider vinegar, soy sauce, and Worcestershire sauce. Use a wooden spoon to scrape up any browned bits from the bottom of the pot.
  5. Add the Pork and Herbs:
    • Return the pork shoulder to the Instant Pot. Sprinkle the dried thyme and rosemary over the top.
  6. Pressure Cook:
    • Secure the lid on the Instant Pot and set it to high pressure for 60 minutes. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release.
  7. Rest and Slice:

    • If you want to make gravy, set the Instant Pot to sauté mode. In a small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the cooking liquid and cook until thickened about 2-3 minutes.
