New cheese and cocktail bar coming to former Clock Shadow Creamery space in Walker’s Point

Hill Valley Dairy, which took over the Clock Shadow Creamery space in Walker’s Point in December , is bringing a new artisan cheese and cocktail bar to the building.

It will be similar to Hill Valley’s cheese bar in Lake Geneva , 512 Broad St. #510, which opened in 2022. That spot has cheese and wine pairings like the Red, White and Blue plate, served with a red and two white wines, Hill Valley’s cheddar and alpine cheeses, and a choice of blue cheese.

The Milwaukee concept will expand on the Lake Geneva menu with similar wine pairings, while adding a new craft cocktail component. Each drink on the cocktail menu can be served with a unique cheese plate pairing, according to Josie Henningfeld, who operates Hill Valley Dairy.

“We’re looking to get a pulse on the city and bring something unique and different,” she said. “The focus is cheese. We wanted to come up with cocktails for the cheeses we make.”

Henningfeld co-owns the creamery with her cheesemaker husband, Ron, and his brother, Frank, who also owns and operates the Henningfeld’s third-generation dairy farm in East Troy that supplies all the milk used for Hill Valley cheeses.
