According to Fowler’s Chocolates website, the origins of where sponge candy came from first are unknown. It is popular not just in Buffalo but also all across the country and the world. In Australia, it’s called honeycomb. In the United Kingdom, it’s called cinder toffee. In the the Pacific Northwest, it’s called sea foam.
