Slew of new restaurants look to open in town

Hungry diners will soon have a lot more options to choose from.

It appears the city is having something of a restaurant renaissance, as nearly a dozen new dining destinations are looking to open locations in the near future.

They range from two full-service, sit-down eateries, Boulder Taphouse and Vita Bella Ristorante Italiano; to several fast-casual restaurants, Panera Bread, Firehouse Subs, Chipotle Mexican Grill and Jersey Mike’s; to fast-food franchise Wendy’s; to coffee house giant Starbucks; and, finally, ice cream chain Baskin Robbins, which is combining with Jimmy’s John’s at a brand-new location.

The city also recently became home to the region’s first Hawaiian poke business, with Poke One opening at the beginning of this month in the Town Centre Plaza off Highway 25, serving fresh and flavorful raw-fish and rice bowls.

Further downtown, the Block 52 development includes a designated spot for a restaurant on the corner of the ground floor at River and Pine streets, but, as of now, no tenant has been found to occupy the space, which includes a spacious outdoor patio overlooking West Bridge Park.
