L’Oca d’Oro chef-partner Fiore Tedesco dreams about how he can refine his approach to hospitality.
L’Oca d’Oro served as a leader in Austin’s hospitality scene throughout the pandemic. Tedesco and partner Adam Orman practiced extreme caution in reopening their restaurant, which they did only after helping to serve disadvantaged communities and people in need, always keeping worker and customer safety in mind.
Their thoughtful leadership, practiced in conjunction with Good Work Austin, of which Tedesco and Orman are founding members, served as a template for responsible hospitality and helped earn them the #1 spot in the 2022 Austin360 Dining Guide . But the approach also stripped the restaurant closer to the bone in terms of efficient operating.
The duo wants to bring a new warmth to their Mueller neighborhood restaurant by introducing a new multi-course tasting menu in the dining room and creating a chef’s counter that connects the kitchen to the dining room. The new format will create an intimacy in the high-ceiling space, bringing the chefs and cooks closer to guests.
