Baja’s Restaurants owner David Boutros passes away

SOUTH KINGSTOWN, R.I. (WPRI) — The owner of a popular Rhode Island-based Mexican restaurant chain has died.

Baja’s Restaurants announced the passing of owner David Boutros in a social media post Monday night. Boutros passed away Saturday after a long battle with a terminal illness, according to his obituary .

“Even with challenges along the way, David’s passion and determination never faltered,” the restaurant wrote . “His focus on great food and customer service earned him a loyal following at each Baja location.”

There are 15 Baja’s restaurants spanning Rhode Island, Massachusetts and Connecticut. The Mexican restaurant chain is also in the process of opening its 16th location in Coventry, Rhode Island.

It was always Boutros’ goal to expand Baja’s footprint by opening at least 20 restaurants.

“David’s dream of opening 20 restaurants wasn’t just a goal — it was a symbol of his belief in hard work and dedication,” Baja’s explained. “Even after his passing, David’s legacy lives on through the success of his restaurants.”
