This recipe is perfect for a quick weeknight dinner or a special meal. It’s easy to make and can be customized with your favorite ingredients.
Ingredients:
- 1 pound beef sirloin, thinly sliced
- 3 cups cooked rice (preferably day-old)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 eggs, beaten
- 2 green onions, chopped
- Salt and pepper to taste
Instructions:
- Marinate the Beef: In a bowl, combine the beef with 1 tablespoon of soy sauce and 1 teaspoon of sesame oil. Let it marinate for at least 15 minutes.
- Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and cook until browned and cooked through about 3-4 minutes. Remove the beef from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add the remaining vegetable oil. Add the onion and garlic, and cook until fragrant and softened, about 2 minutes. Add the frozen peas and carrots, and cook for another 3-4 minutes.
- Scramble the Eggs: Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
- Add the Rice: Add the cooked rice to the skillet, breaking up any clumps. Stir in the remaining soy sauce, oyster sauce, and sesame oil. Cook for about 5 minutes, stirring frequently, until the rice is heated through and slightly crispy.
- Combine and Serve: Return the cooked beef to the skillet and mix everything. Season with salt and pepper to taste. Garnish with chopped green onions and serve hot.
