We love this creamy cajun chicken pasta soup. It can be as spicy or as mild as your family prefers. We love the added lemon too as it brings a nice element to this flavorful dish. It looks like a lot, but if you’ve got your ingredients prepared, this really can be on your table in about 30 minutes. This is what you’ll need for 6 servings:
Ingredients:
- 1 tablespoon olive oil
- 1 pound boneless and skinless chicken breasts or thighs
- 8 ounces andouille sausage, sliced or diced and browned (optional)
- 1 teaspoon cajun seasoning
- 1 tablespoon butter
- 1 cup onion, diced
- 1 cup celery, diced
- 1 cup red bell pepper, diced
- 4 cloves garlic, chopped
- 1 teaspoon thyme, chopped
- 1 tablespoon cajun seasoning
- 6 cups chicken broth
- 1, 14.5 oz can diced tomatoes
- 1 tablespoon worcestershire sauce
- 8 ounces ditalini pasta
- 1/2 cup heavy whipping cream
- 1/3 cup parmesan cheese, grated
- 1 tablespoon lemon juice
- 2 tablespoons parsley, chopped
- 2 green onions, thinly sliced
- Salt and pepper to taste
Heat oil in a large saucepan over medium-high heat. Season the chicken with Cajun seasoning. Let it sit, covered for a few minutes. Meanwhile, cook the sausage, if using. Remove from pan when cooked through, then add chicken to the pan and cook until browned, about 2-4 minutes per side. Remove the chicken and set it aside with the sausage.
