Where to find this comfort food on your island

HONOLULU (KHON2) — It’s Wednesday, Nov. 6, the day after a majorly contentious election. So, as we stress out about the future, why not celebrate National Nachos Day because, who doesn’t love nachos.

Nachos are a popular Tex-Mex dish made from tortilla chips topped with melted cheese and often accompanied by various other ingredients like jalapeños, ground beef, guacamole, kalua pig, chicken, beans, tomatoes, lots and lots of cheese and sour cream.

The comfort food is believed to have been invented in 1943 by Ignacio “Nacho” Anaya, a maître d’ at a restaurant in Piedras Negras, Mexico, just across the border from Eagle Pass, Texas.

Legend has it that one evening, a group of American military wives arrived after the kitchen had closed; and Anaya quickly whipped up a snack using available ingredients: tortilla chips, cheddar cheese and jalapeños.

He named the dish “Nachos Especiales,” which was soon shortened to “nachos.”
