I love making this egg roll in bowl recipe. It is a recipe that I make when I have several different vegetables that I need to use up before they go bad. It is a really versatile recipe as you can add several different vegetables to this. You will need the following ingredients to make this:
Recipe:
1/2 – 1 pound of ground beef (I used 93%)
1 pound of shredded coleslaw mix
1/2 of an onion, diced
1/2 of a bell pepper, diced
4 green onions, sliced thinly
1 teaspoon of fresh ginger, grated
2 cloves of garlic, minced
1/3 cup of soy sauce
3 tablespoons of cooking sherry
3 tablespoons of brown sugar
1 tablespoon of cooking oil
salt and pepper to taste
2 cups of cooked rice
optional ingredients: sliced mushrooms, water chestnuts and broccoli
Preheat a large skillet to medium high heat.
Add the ground beef and season the meat with salt and pepper. You can use 1/2 pound if you like more vegetables or 1 pound in you like more meat in your meals. Cook the beef until it is cooked through.
