New chef joins Quince; Fort Worth, Austin restaurants offer New Year’s Eve special

Austin chef Julien Hawkins, formerly known for steaks and chops at that city’s highly rated Hestia , has joined the Mexico-based Quince restaurants in Texas, founder Brian Sneed of Fort Worth said this week.

Hawkins, new at Quince in Austin, collaborated on the New Year’s Eve menu with chef Damian Reyna of the Fort Worth location, 1701 River Run in the Westbend shops.

Hawkins was formerly the chef at Hotel Proper in Austin. At Hestia, he worked for the company that also operates Michelin-honored Emmer & Rye in Austin. He has worked in the kitchen at Asador Etxebarri in Spain, a Michelin restaurant often ranked among the world’s best.

Hawkins will host special events and wine dinners at Quince Riverside in Fort Worth, Sneed said.

For $150, the Quince chefs’ menu for New Year’s Eve will feature oysters, chicken-and-sausage gumbo, beef tenderloin with lobster tail thermidor and a baked Alaska dessert.
