The new year is here, and so are a lot of changes for the Eugene restaurant scene. Closures continue to sweep through the downtown district as The Chicken Shanty and Bagel Sphere both shut their doors.
On the bright side, Amore Italian Bistro in Springfield is on a mission to bring a New York-style deli to Eugene, complete with delicious Reuben sandwiches, a wide selection of soups and pastries made fresh daily.
Amore Italian Bistro and Bakery is bringing NYC to Oregon
Shannon Jensen works a myriad of positions at Amore: food service, dishwashing, helping out on the retail side of things. She is one of the three-member team that keeps Springfield’s new Italian Bistro up and running.
Jensen’s co-workers, Julie Agan and Ted Hutchins, purchased the space for Amore at the end of April of 2024. The restaurant, a hybrid of a boutique and a New York-style deli, combines the couple’s long-time dreams.
Hutchins has always loved working in the kitchen, and Agan has a career of selling antiques and handicrafts around Springfield. Together, the pair are making their dreams of owning a small business come true.
