The Springfield-Greene County Health Department cited a local bakery after finding mouse droppings in a cabinet, according to a Jan. 8 food inspection report.
S & L Donuts, 280 E. U.S. Highway 60 East in Republic, will require a re-inspection due to the presence of mouse droppings, according to the SGCHD report. The bakery was also cited for not marking discard dates on several ready-to-eat foods.
Issues found during inspections fall into either priority or non-priority violations. Priority violations impact the safety of the food, such as cross-contamination between raw and ready-to-eat food, improper food temperature and poor personal hygiene and employee health. Multiple priority violations can lead to an establishment being shut down.
